Another option is Evaporust, and it’s advertised as ph neutral. Consequently, it shouldn’t eat away any non rusty metal. I have only used it a few times, but so far it seems effective with patience.
Also, for carburetor advice, try taking pictures of how the parts are oriented and attached before you disassemble them. This is especially helpful is reassembly gets posponed for some reason.
