Thank you to both of you!  I will use 1 gasket on each side of the ss baffle plate.
I plan to lap both the cover and flat side of  the baffle plate as well since they both rock a little when placed on a flat surface.

I also plan to coat both gaskets with permatex aviation gasket maker as well based on what I have seen recommended in other posts.
